(Carcaixent, Valencia, 1995) works at the intersection of gastronomy and contemporary art, approaching sensory experience as a mode of thought. His practice is grounded in an expanded understanding of gastronomy as an aesthetic practice capable of activating multiple perceptual registers simultaneously and of exceeding the traditional boundaries between the senses.

Working across sculpture, installation, edible experiences and live arts, Tarrassó explores new configurations for gastronomy at the threshold between taste and vision. These practices shift the position of the viewer towards direct involvement, placing the body at the centre of the work.

At the core of his practice lies an inquiry into how experience is perceived and constructed through the body, questioning inherited sensory hierarchies. Gastronomic experience thus operates as an artistic device through which alternative ways of relating to time, matter and the environment can emerge.
