Gastronomíc experience


La Lola is a sensory journey through Hacienda La Herrería in Quito, Ecuador, structured around a twelve-course menu inspired by the estate’s historic recipe book.

The title of the experience pays homage to Dolores “Lola” Gangotena, a passionate art collector who played a central role in restoring and shaping the hacienda into the place it is today. Through her collection of art, furniture and decorative objects, she gave its interiors the distinctive character that still defines the house.

The experience unfolds through the different rooms and spaces of the house. Served as a succession of small bites, the dishes respond to the architecture, decoration and atmosphere of each setting, translating its colours, textures and materials into edible forms.

The experience begins in the gallery, accompanied by live music and cheese fritters with herb butter. The journey continues through the church and rooms before moving into the back garden and library, where a rabbit pie is served.

The menu draws on a handwritten recipe book belonging to several generations of women of the Ponce family, dating from the 19th and 20th centuries. Its recipes reflect a Creole cuisine rooted in Spanish techniques and transformed through the incorporation of American ingredients. These recipes were studied, adapted and reinterpreted to create the twelve-course menu.

Hacienda La Herrería, originally known as Bellavista, was built in 1750 and became one of the largest rural estates in the northern highlands of Ecuador. At its greatest extent, the property covered around 1,000 hectares and extended to the slopes of Pasochoa Volcano.

Hacienda La Herrería, originally known as Bellavista, was founded in 1750
and became one of the largest rural estates in the Ecuadorian highlands.

Located in Los Chillos, near Quito, it was restored and shaped by Dolores “Lola” Gangotena
and her husband,  president Camilo Ponce Enríquez.

Lola’s art collection gave its interiors the distinctive character they retain today.
The hacienda later served as a presidential residence.
