El comedor inca (The inca dining room) is a cookbook that grew out of a gastronomic experience developed at Hacienda San Agustín de Callo, in Lasso, Ecuador.

Built on the remains of an Inca palace, San Agustín de Callo is a distinctive example of the encounter and syncretism between indigenous and colonial cultures in Ecuador. The architecture, the history of the hacienda and its surrounding landscape became the starting point for a gastronomic research project exploring how a place can be read through its ingredients, culinary traditions and forms of hospitality.

The first experience took place on December 5 and 6, 2019, in the hacienda’s Inca dining room. A fifteen-course menu was conceived as a reflection on Ecuadorian Creole cuisine and the history of the estate, bringing together local ingredients, products from the hacienda’s orchard and wild herbs gathered from the surrounding landscape.

Rather than reproducing a historical cuisine, the menu approaches the past through contemporary gastronomic practice. The dishes draw on the architecture, landscape and stories of San Agustín de Callo.

The dining experience became the starting point for The Inca Dining Room, a cookbook developed in collaboration with graphic designer and illustrator Maria Guerrero. The book brings together the recipes created for the occasion with photography, illustrations and design, extending the experience into a publication.

Hacienda San Agustín de Callo stands on the remains
of an Inca royal palace dating from the 15th century.
After the Spanish conquest, the site passed to the Augustinian order.
In 1921 it was acquired by General Leónidas Plaza Gutiérrez.
The hacienda has remained in the Plaza family ever since.
